Marinate the chicken

Grind lemongrass, shallots, garlic and Ginger, add salt, pepper, fish sauce, honey, vegetable oil and mix it well. Spread evenly on boneless chicken thighs, cover it and marinate it in the fridge for 2-4 hours. (The longer you marinate it the more flavourful it could be;)

Place your chicken in the oven

Put the chicken on the baking tray, place some lemongrass on top of each piece of chicken, bake it for 20 minutes on 218°C, then use tray flip mode, bake it for another 20 minutes on 180°C.
You can also use an air fryer, fry it for 20-25 minutes on 205°C, don't forget to flip it over halfway through frying.

Prepare the dipping sauce. Cut the chicken into bitesized pieces, serve it with rice and some fresh lettuce.
