🇯🇵 Japanese chicken curry: a comforting, flavorful recipe
Japanese chicken curry, or kare raisu, is an emblematic dish of Japanese home cooking. Mild, just the right amount of spice, and incredibly creamy, this dish is one of the most popular in Japan, served both at home and in the school canteen. In this version, we use the famous Golden Curry paste, a staple in Japanese cupboards, to create a rich, perfectly balanced sauce.
Golden Curry Paste
The secret of this dish lies in Golden Curry paste, a solid preparation in tablet form that is diluted as it simmers. It already contains a skilful blend of turmeric, coriander, cumin, fenugreek and cloves, offering a mild but complex taste. You can easily find this curry paste in any specialized grocery store.
A recipe to suit every taste
The charm of homemade Japanese curry lies in its great adaptability. You can :
- Replace the chicken with simmered beef, shrimp or tofu for a vegetarian version.
- Add apples, for a sweet touch that’s very popular in Japan.
- Serve with Japanese rice, udon noodles, or even bread for every last drop of sauce.
Japanese curry: a modern dish with European roots
Few people know it, but curry is not native to Japan: it was introduced in the 19th century by the British. Since then, it has been adapted to local tastes and has become an everyday classic, on a par with ramen or donburi.
Today, it’s cooked in every Japanese family, and appreciated for its simplicity, sweet, enveloping taste, and universal “comfort food” appeal.
This Japanese chicken curry with Golden Curry is the perfect introduction to Japanese cuisine: quick, generous, customizable and delicious. Whether you’re a novice or a passionate fan of Asian cuisine, this recipe is sure to win over your palate!
