    Prepare the ingredients

    Wash and cut the vegetables and chicken in bitesize and set it aside. Heat a pan with some vegetable oil, add the green curry paste, grill it on low heat for approximately 2 mins to maximise the flavor.

    Grill the chicken

    Add the chicken inside the pan and grill it with the green curry paste on medium-high heat for about 5 mins, pour in 1/3 of coconut milk and stir it to combine.

    Combine all the ingredients

    When the chicken is cooked, add bell pepper, mix it well and add the rest of the coconut milk and turn it to medium-low heat and simmer it for 20 mins. You can also add some lemongrass and red chili pepper for some extra flavor.
