Ingredients

500g Minced pork or pork belly
1 Carrot grated
1/2 Cucumber grated
3 cloves Garlic minced
1tbsp Ginger minced
2 Star Anise
to your tastes Pakchoi or Chinese Cabbage
1tbsp Cornstarch
For the Zhajiang noodles sauce
1tbsp Dark soy sauce
2tbsp Soy sauce
1tbsp Sweet soy bean paste
1tbsp Soy bean paste
1tbsp Oyster sauce
2tbsp Rice wine
2tbsp Water
1tbsp Sugar

This recipe is very simple to make at home and all your guests will be delighted!

Cut your vegetables

Grate your carrots, cucumber and dice your spring onions and ginger. You will boil Pakchoi later.

Prepare the Zhajiang Sauce

In a bowl, add soy sauce, dark soy sauce, oyster sauce, soy bean paste, sweet soy bean paste, rice wine, water and sugar (in the quantity indicated in the ingredients list) and mix all of it well.

Fry your meat

In a large pan, heat some vegetable oil and add your minced pork meat, minced garlic and ginger and let it cook on medium high heat for 10 minutes.
If you are using pork belly instead of minced meat. Start by cutting off the fat, dice it and set aside. Chop your pork belly meat into small chunks. Fry your the fat first and then add your meat chunks, garlic and ginger in the pan.

Add spring onions, star anise & the Zhajiang Sauce

After 10 minutes, add your chopped spring onions, mix it and let it cook on medium high heat for about 3 minutes and add the Zhajiang Sauce with the star anise. The sauce should cover the meat, if it doesn't, add some more water and mix well.

Let your Zhajiang Sauce simmer

Once everything is well mixed, cover your pan and let it simmer on medium low heat for about 20-30 minutes. Dilute the cornstarch in a small cup of water, add it to the sauce to thicken it and stir it for 5 minutes.

Cook your Noodles

If you have, better to use fresh noodles, i personally like them quite thick. Boil some water and cook your noodles for about 5 minutes (check exact time on the package). In the meantime, boil your Pakchoi for about 8 minutes.

Your homemade Zhajiang Noodles are ready!

Dress your noodles in a bowl or a deep plate and pour your delicious Zhajiang sauce on top of it. Add your grated cucumber and carrots on the side with your boiled Pakchoi. You can also add some spring onions as a topping.
