Sōmen (そうめん) are ultra-thin Japanese wheat noodles, traditionally served cold, especially during hot summer days. Their delicate texture and quick preparation time make them a staple of seasonal Japanese cuisine. But beyond their simplicity lies a cultural heritage, nutritional value, and a variety of regional twists worth discovering.
What are Sōmen noodles?
Sōmen are white wheat noodles, thinner than 1.3mm, made from wheat flour, water, and salt. Unlike udon (thick) or soba (buckwheat-based), Sōmen are usually hand-stretched and dried. In summer, they’re enjoyed cold with a flavorful dipping sauce called mentsuyu. In colder seasons, they appear as nyūmen, served in hot broth.

Cook the SomenBring a large pot of water to a boil, add Somen and stir gently to prevent sticking. Cook for 2–3 minutes on medium heat. Drain and rinse under cold running water to stop cooking, rub the noodles gently to remove starch and place it in a bowl of ice water to chill. |

Make the dipping sauceIn a small saucepan, combine Dashi, soy sauce, mirin, and sugar. Bring to a light simmer for 1–2 minutes, then let it cool completely. Chill in the fridge or serve over ice. |

Time to serve!Arrange noodles on a bamboo mat or in a bowl with some ice. Pour dipping sauce into small individual cups, garnish dipping sauce with toppings(chopped spring onions and wasabi) as desired. |
